Because they intrigue me, but that does not necessarily mean that I want to make them, taste them, or serve them!
It is what lies beyond them that fascinates me, what drove cooks to come up with these ideas? Necessity? Frugality? A desire to impress, or a ready-made excuse for why a meal was not quite as expected?
What about the 'Poor Man's' recipes, the 'Working Man's', and the 'Imitation'?
I need to explore them all, think about what the subtle, and not so subtle, differences may be - psychological, sociological?
From Mock Apple Juice, through to Mock Whitebait, with so many things in between. I will attempt to list and examine these recipes, perhaps even cooking one or two along the way - as long as it doesn't involve meat... so no mock giblet soup, mock sweetbreads, etc.
Don't worry, I will give you the recipes, you may wish to try them yourselves.
